Lichtenstein Castle (Schloss Lichtenstein) is a privately-owned Gothic Revival castle located in the Swabian Jura of southern Germany. It was designed by Carl Alexander Heideloff and its name means “shining” or “bright stone”. The castle overlooks the Echaz valley near Honau, Reutlingen in the state of Baden-Württemberg. The modern castle was inspired by the novel Lichtenstein (1826) by Wilhelm Hauff and was built in 1840–1842. The ruins of the medieval castle that inspired the novel are a few hundred meters away.

Cawston Ostrich Farm, located in South Pasadena, California, United States, was opened in 1886 by Edwin Cawston. It was America’s first ostrich farm and was located in the Arroyo Seco Valley just three miles (5 km) north of downtown Los Angeles and occupied nine acres.

In the 1930s, Ruth Wakefield, the inventor of the chocolate chip cookie, ran the Toll House Inn, a popular restaurant in eastern Massachusetts, with her husband. Using an ice pick, Wakefield broke a semisweet chocolate bar into little bits, mixed them into brown-sugar dough, and the chocolate chip cookie was born. In 1939, she sold Nestlé the rights to reproduce her recipe on its packages (reportedly for only $1) and was hired to write recipes for the company, which supposedly supplied her with free chocolate for life.

Ingredients:2 ¼ cups all-purpose flour* 1 teaspoon baking soda *1 teaspoon salt* 1 cup butter (2 sticks), softened *¾ cup granulated sugar *¾ cup packed brown sugar *1 teaspoon vanilla extract *2 large eggs *2 cups/12 ounces semisweet chocolate chips *1 cup chopped nuts (optional)
Directions:Heat oven to 375. Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixing bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips and nuts, if using. Drop by rounded tablespoon onto ungreased baking sheets.
Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Coconut fish curry Ingredients
1 tbsp vegetable oil
1 onion, finely chopped
thumb-sized piece ginger, finely grated
3 garlic cloves, crushed
1 tsp shrimp paste
1 small red chilli, shredded (deseeded if you don’t like it too hot)
2 lemongrass stalks, split, then bruised with a rolling pin
1 heaped tbsp medium curry powder
1 heaped tbsp light muscovado sugar
small bunch coriander, stems finely chopped
400g can coconut milk
450g skinless hake fillets, cut into rectangles, roughly credit card size
220g pack frozen raw whole prawns
(we used Big & Juicy Tiger Prawns, which are sustainably fished)
1 lime, halved
cooked rice, to serve

Method
Heat the oil in a wide, lidded frying pan, then soften the onion for 5 mins. Increase the heat a little, stir in the ginger, garlic, shrimp paste, chilli and lemongrass, and cook for 2 mins. Add the curry powder and sugar, and keep stirring. When the sugar starts to melt and everything starts to clump together, add the coriander stems, coconut milk and 2 tbsp water, then bring to a simmer.
Add the fish to the sauce, tuck the prawns in here and there, then squeeze over half the lime. Pop on the lid and simmer for 5 mins more or until the hake is just cooked and flaking, and the prawns are pink through. Taste for seasoning, adding a squeeze more lime to the sauce if you like. Scatter over the coriander leaves and serve with rice.

James, was a commercial hemp farmer and Baptist minister in Kentucky who migrated to Missouri after marriage and helped found Liberty College in Liberty, Missouri.
